Former-President Bill Clinton announced in August 2011 that he has adopted a vegan lifestyle, and all over the world meat-eaters wondered, “Would I really live longer, feel better and stay healthier if I did the same thing? At 65, Clinton has lost 24 pounds after switching to a vegan diet and looks fit, trim and much happier. Clinton had quadruple bypass surgery in 2004 and then stent surgery in 2010, and is following a vegan eating plan to improve his heart health, he says.
It isn’t surprising that the June edition of the UCLA Magazine announced environmentally focused UCLA would adopt a "Meatless Monday" program to promote the benefits of not eating meat at least once a week at its Ronald Reagan UCLA Medical Center. And, the article also applauded another “meatless” program in which UCLA campus dining halls for students promote" Beefless Thursday."
Daniel Blumstein, professor and chair of the Department of Ecology and Evolutionary Biology and a professor in the UCLA Institute of the Environment and Sustainability, also states,. "If you are concerned about climate change—you should eat less meat."
Any vegan or vegetarian can affirm that you smell better when you don't eat red meat and that eating veggies seems to contribute to sharper memory and greater intelligence, states the UCLA Magazine.
And, vegetables are also sexy! Although the exact science is not known, there are those who swear that chilies, asparagus, celery, fennel, garlic and Andean mustard are among Nature’s finest aphrodisiacs.
Marion Nestle, a nutrition professor at New York University, states that about 3% of U.S. adults are considered full-fledged vegetarians, and about 1% of people are vegans because they also never eat dairy, eggs or honey, according to the Vegetarian Resource Group.
In May 2011, 70-year-old former-Beatle Paul McCartney released a vegetarian cookbook entitled, "The Meat Free Monday Cookbook." in an attempt to convince people to avoid eating meat for one day a week.

HOW DOES NOT EATING MEAT HELP THE HUMAN BODY?
On May 14, 2012, the Los Angeles Times reviewed a just-released study by the Harvard School of Public Health which concluded that one of the reasons it is believed eating red meat results in an increased rate of early deaths from heart disease is linked to the saturated fat and cholesterol in beef, pork and lamb. But, also, the type of iron found in red meat, known as heme iron, has been linked to heart attacks and fatal heart disease, and the type of Sodium in processed meats may increase blood pressure, which is a risk factor for heart disease. Other chemicals that are used in processed meats may play a key role by damaging blood vessels.
"Red meat has also been linked to a greater risk of developing colorectal and other cancers, the study states. Researchers believe heme iron could, again, be a culprit. It is more easily absorbed into the body than other forms of iron, and can cause oxidative damage to cells. This same oxidative damage can be created when meat is cooked at a high temperature. Preservatives used in processed meats also may play a role, scientists have said, because they convert into carcinogenic compounds in the body, according to the study.
