Today in the Sunday New York Times Magazine, an expose (Is Sugar Toxic?) on the evils of sugar, how much America (and the world) consumes (too much) and why fructose is making people fat (especially children) was published. I encourage everyone to read the article and more importantly, watch Dr. Lustig’s presentation below.
Two issues struck me most with regard to eating habits of people with type 1 diabetes and people with type 2 diabetes.*
1. Carbohydrates with sucrose and fructose are the real problem, but there is one other very important factor that I believe many people are not understanding. Carbohydrates WITH FIBER are necessary for energy. Anyone who thinks they can eat a well-balanced diet without carbohydrates is kidding themselves – however, here is what counts most: FIBER, which is found in carbohydrates like fruit, vegetables, and whole grains, is essential. This is what makes carbohydrates good-for-you and essential for health. Carbohydrates without fiber? Eliminate them. (Probably about 80% of what is on the shelf in your grocery store).
2. High Fructose Corn Syrup is bad for people without diabetes and lethal for people who have diabetes already (including type 1s). Eliminate all food with HFCS today. It is just as bad a trans fat. You will live longer, healthier.
I encourage everyone to watch the video below “Sugar: The Bitter Truth.” It’s long but worth every minute, and you will learn everything you need to know about what is wrong with our food today. Do it for your children. (Or grandchildren.)
*There are really important distinctions between these two groups so rather than have any conflicts – let me just say that type 2s can change their diagnosis early on and type 1s cannot. Type 1 is an autoimmune disease and type 2 is a metabolic condition.
