Avoid Fattening Gametime Buffets: Eat These Healthy Super Bowl Snacks

Tempted by your man's enormous, fattening Super Bowl spread? Well, stop gazing with envy as your man chows down and start grazing on some goodies yourself! 'Real Housewife of New York' and New York Times Bestselling Skinnygirl Bethenny Frankel shares her tips on how a Skinnygirl can work through a Super Bowl spread -- and enjoy a virtuous spread of her own at kick off!

Tips
To avoid the gorge and regret routine, Bethenny says it helps to treat Super Bowl Sunday as a "taste everything, eat nothing" day. Get your graze on, but do it mindfully. No gorging or bingeing.

Before the big party, have a 250 calorie good investment snack so you're not ravaging the buffet out of desperation. Some ideas:

  • Edamame
  • Handful of nuts
  • Bowl of non-creamy vegetable or chicken soup
  • Slice of whole grain bread with nut butter
  • Whole grain pita with hummus
  • Whole grain bread or English muffin with a few slices of turkey and Dijon

Super Bowl Recipes

Game-Time Zesty Baked Chicken Wings with Blue Cheese Dip
(Serves 8)
3 Tablespoons Olive Oil
1 Tablespoon Dijon mustard
1 tablespoon fresh lemon juice
1/2 teaspoon fresh lemon zest
1 teaspoon finely minced garlic
1/2 teaspoon salt
1/2 teaspoon black pepper
Dash of cayenne pepper
16 chicken wings, each halved at the joint with the tip removed
1 1/2 cups whole-wheat bread crumbs
1 cup freshly grated Parmesan cheese
6 tablespoons chopped fresh parsley

Dip Ingredients
1 cup fat-free yogurt
1/2 teaspoon fresh, chopped parsley
1/2 teaspoon fresh lemon juice
1/4 teaspoon fresh lemon zest
1/4 teaspoon salt
1/4 teaspoon fresh black pepper
1/8 teaspoon Worcestershire sauce

  • Combine the olive oil, mustard, lemon juice, lemon zest, garlic, salt, pepper and cayenne pepper in a bowl and whisk together.
  • Place the chicken wings in a gallon-size resealable plastic bag and pour the marinade all over them. Close the bag and marinate the wings in the refridgerator for 1 to 4 hours.
  • Preheat the oven to 425 degrees. Line a baking pan with foil and spray the foil with cooking spray. Set aside.
  • In a small bowl, combine the bread crumbs, Parmesan and parsley. Dip each wing in the bread crumb mixture to coat and place it on the prepared pan. Bake on the lowest oven rack for 30 minutes, turning the wings over after 20 minutes.
  • While the wings are baking, combine all of the dip ingredients in a small bowl. Serve the wings warm with the dip.

Mock-A-Mole with Whole Grain Crackers or Tortilla Chips
Makes about 1 1/2 cups

1 avocado, peeled, pitted and mashed
1 cup cooked green peas
1/4 cup chopped fresh tomato
2 tablespoons chopped fresh cilantro plus more for garnish
1 tablespoon chopped red onion
1 tablespoon chopped fresh parsley
2 teaspoons fresh lime juice
1 teaspoon Worcestershire sauce
1 teaspoon garlic salt
1/2 teaspoon black pepper
3/4 teaspoon Tabasco sauce

Combine all of the ingredients in a large boal and blend with an immersion blender until smooth. Garnish with cilantro. Serve with tortilla chips, whole grain crackers and raw vegetables.

Healthy Tacos
Serves 4

1 lb lean ground turkey
2 teaspoons chili powder
2 teaspoons ground cumin
1 teaspoon garlic salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon Worcestershire sauce
1/2 teaspoon Tabasco sauce
1/2 teaspoon Dijon mustard
1/4 teaspoon red pepper flakes
4 whole wheat tortillas

Toppings
1/4 heart romaine lettuce
1/2 cup shredded reduced fat cheddar cheese
1/2 cup shredded reduced fat monterey jack cheese
Skinnygirl sour cream (1 cup nonfat Greek yogurt mixed with 1 tablespoon fresh lemon juice)

  • Spray a nonstick skillet with cooking spray and put over medium heat. Crumble the ground turkey into the pan. Add the next nine ingredients and cook, stirring and breaking up the meat with a wooden spatula until the meat is browned. Set aside.
  • Wrap the tortillas in a towel and heat in the microwave for 15 to 30 seconds. To serve, put the meat, tortillas, and toppings on serving plates. Everyone can make their own taco.
