Jim Koch of the Boston Beer Company believes he knows the secret to drinking beer all night long and never getting drunk.
"You wanna know my secret? How I can drink beer all night long and never get drunk?” Koch said to Esquire reporter Aaron Goldfarb while drinking together at Manhattan’s The Keg Room.
“Yeast!,” Koch told Goldfarb. “Active yeast. Like you get at the grocery store.”
It seems Koch has been eating active yeast for years. He prefers Fleischman’s dry yeast, and has it each time before he drinks by stirring it in with yogurt.
How much yeast does Koch use?
“One teaspoon per beer, right before you start drinking,” Koch said.
The dry yeast contains an enzyme called alcohol dehydrogenates which functions to break down alcohol, according to the Daily Mail.
The enzyme changes the alcohol molecules into carbon, hydrogen, and oxygen; a similar process to what the liver performs while breaking down alcohol.
Swallowing the yeast before you drink results in the alcohol being broken down before it reaches the brain and drunkenness occurs.
Koch’s trick to staying sober is not full proof, as he admits that it does not completely eliminate the effects of alcohol but simply reduces them.
