People all around the world use coconut oil and in some cultures it’s extremely popular, but with 90% saturated fat, some people have serious concerns. Could coconut oil be a detriment to your health, or is it the missing ingredient for your next dinner?

In the US, Coconut Oil has been maligned over the last 50-60 years primarily through the power of the soy and corn lobby. Instead of using Coconut Oil has India has done for thousands of years, we get "hydrogenated soybean oil" as a cheap imitation. And then we're told that the hydrogenated oil is fine, but the Coconut Oil is bad. Coconut Oil was nearly driven out of the US market due to this propaganda. However, in recent years, healthfood store shoppers have given raw, organic, cold-pressed Coconut Oil a place again in the American home.

Coconut Oil does not go rancid (because it is completely saturated). It is a great precursor to hormones and therefore (even though it does not contain cholesterol) it slightly increases cholesterol within our metabolism which is actually good for us.
